Head Chef: BiCE
An Italian Chef with a passion to create authentic Italian food with a contemporary touch, Cosimo Danese’s warm and patient nature to life has kept diners coming back to BiCE at Hilton Dubai Jumeirah, time and time again.
Born in the South of Italy, Puglia, Cosimo decided that he would pursue a profession as a Chef and moved to the UK to study at the Westminster and Kingsway College in London. Here, he trained and developed a wealth of culinary skills that has since helped to shape his reassuringly comfortable style of cooking that we know today.
After Cosimo’s studies, he secured a placement at the Royal Garden Hotel in London and trained as a Breakfast Chef. Progressing his way up the kitchen ranks, Cosimo was later offered a stint to work at Michelin starred restaurant, The Connaught, as a Chef de Partie and soon entered a whole new world of food and dining.
Five years passed since Cosimo flew from his nest and he yearned to return to the Mediterranean climate to be closer to home. So he later decided to try his hand at running his own restaurant. Opening up a small, cosy, Italian restaurant named Cosimo Danese in Valencia, Spain, Cosimo not only developed his knowledge further about food, flavours and techniques but also learnt about the restaurant business as an entrepreneur as well as understand the essential key ingredients to becoming a successful chef.
The opportunity to move to even warmer climates came about again in 2008 when Cosimo was offered a position to work as a Sous Chef at the well-established global name, BiCE in Dubai’s Hilton Dubai Jumeirah, UAE. Part of the team that has been instrumental in making BiCE at Hilton the flagship restaurant in the region, Cosimo has developed a reputation for creating Italian Classics with a splash of his own personality including Wild mushroom Risotto with sauté Langostines and Rasberry crème brule’ with White Truffle ice cream in a berry sauce. It was here that Cosimo’s time to really shine came in October 2010 in order to lead the team at BiCE at Hilton Dubai Jumeirah.
His relationship with his guests has been strong and faithful over the years working in Dubai. Under his leading Bice Restaurant won What´s on award as best Italian Restaurant on 2011, BBC Good Food award as best Mediterranean Restaurant in 2012 and Time Out Award as High Recommended Italian in 2012. He has been nominated and short listed as Head Chef Of the Year MEA in 2013 by Caterer Award.He will ensure that the BiCE name will be represented with pride across the globe while the restaurant at Hilton Dubai Jumeirah will continue to be recognized as a place that offers its guests a contemporary Italian dining experience that is consistently at its finest.
Cosimo lives in Dubai and enjoys playing football in his free time, listening to the Blues and Rock music as well as venturing out to try out local restaurants that offer a rustic experience.
