Restaurant Manager: BiCE
Known for his bouts of energy, Italian-born Piero Giglio brings with him an international mindset and flair for new ideas that is sure to keep BiCE at Hilton Dubai Jumeirah ahead of its competition. Managing the BiCE that is the flagship restaurant in the region, Piero drives the business of a multi-award winning restaurant that has earned a reputation for offering one of the finest modern Italian dining experiences in the region.
Piero is well entrenched in the hospitality business with sixteen years of experience. Born in south of Italy(Calabria), Piero’s early schooling shows that he was destined to dedicate his profession in the Catering and Service Management industry. He graduated with a degree in Hotel Management in Italy and soon after, earned a diploma at the A.I.B.S Bartender’s Institute. The latter achievement would soon propel Piero to work at high-end establishments in major cities across the globe and became locally known as one of the finest Oenophiles. With a desire to further his knowledge in the hotel business, Piero later moved to the UK and continued his studies at the Westminster College in London and graduated with yet another degree in Hotel Management.
And so Piero began his restaurant career in 1991 as a waiter in various Italian restaurants in Florence, Italy – some of which stand today as successful businesses that have managed to expand its name internationally. Working his way up the ranks of the restaurant ladder, Piero soon progressed to the position of Assistant Bar Manager in London’s Grosvenor house on Park Lane and continued to develop his experience working in large hotel operations that were well-established and prestigious in name.
Piero’s hard-work and determination to be the best at his game led him to a number of opportunities to work for some of the industry’s finest restaurants including the Michelin star restaurant, Stefano Cavallini at the Halkin Hotel in London and also Ago restaurant, owned by one of Hollywood’s greatest icon, Robert Deniro at the Shore Club hotel in Miami.
Piero’s commercial drive and natural ability to make his guests feel at home was also quickly spotted by the Ruggeri family, founders of the BiCE restaurant empire. In 1999, Piero found his next calling at the Caffee Milano Restaurant (by Bice group) in Miami, taking the role as Restaurant Bar Manager and demonstrated his sharp approach to managing a highly successful family enterprise.
Five years on, Piero took yet another big step into international waters and decided that Dubai would be another exciting place to pursue. He soon left the States to become Restaurant Manager of Carnevale restaurant at the Jumeirah Beach Hotel in 2007 and now currently heads the team at BiCE, Hilton Dubai Jumeirah. Running a tight ship, Piero looks forward to offering his broad management experience and continuing his tight and close-knitted relationship with his guests that have been instrumental in driving covers and maintaining a loyal following in the years he’s been in the business.
