The opening dinner of the Grand Chapitre was held in a Parisian institution: the Pavillon Ledoyen – an establishment founded in 1791 by Pierre-Michel Doyen, the youngest in a family of renowned caterers. Since July 1, 2014, the three Michelin starred chef, Yannick Alleno, has been running the kitchens at this flagship restaurant in the capital.
After the cocktails, the members present were given the chance to savour the quality of the dishes served and appreciate the hard work of the front of house team. Ever true to the Chaîne des Rôtisseurs, Chef Yannick Alleno was keen to present the menu that was put together by his predecessor, Chef Christian Le Squer (3 Michelin stars), in its entirety.
At the end of the dinner, the kitchen and front of house teams were warmly applauded by the guests and congratulated by President Yam Atallah. Chef Yannick Alleno expressed his delight and pleasure in welcoming the Chaîne des Rôtisseurs by whose values, on which the Association is based, he is particularly impressed.
