Fruit sashimi with frozen virgin Mojito

Ingredients

100g Frog Skin Melon
100g Lorenzini Melon
40g Nectarine
60g Mango
20g Kiwi
20g Mix Berries
20g Passion fruit
100ml Lime Juice
100ml Lemon juice
150g Sugar
30g Liquid glucose
5g Mint leaves
1g Edibles flower

Method

  • Mix together lemon juice, lime juice, sugar and glucose and bring to boil. When cold add chopped mint leaves and keep in freezer.
  • Slice all the fruit very finely and marinate in passion fruit for about 2 hours.
  • Place all the fruit in a cold bowl plate and serve with a scoop of sorbet. Garnish with fresh mint leaves and edibles flowers.
