Perino tomato, Burratta and Avocado foam

Ingredients

80g Burrat a Cheese
60g Perino Tomato
60g Avocado
20ml Extra Virgin Olive Oil
20ml Lemon Juice
5g Table salt

Method

  • Blend together Avocado , Olive oil,lemon juice and salt.
  • Cut the burrata in cubes
  • Cut the Perino tomatoes in quarters
  • In a flat plate place the burrata cubes, 4 pieces of tomatoes, and some avocado foam. Serve with some extra virgin olive oil.
